No it is not healthy, or good for you. But, it is decadent and the right mixture of chocolate and mint. My mom calls them Peppermint Patty Cakes. They are actually brownies...
1c. Butter (all delicious recipes start out this way)
20 FRESH chocolate mint leaves (more for a stronger mint flavor)
2/3c Cocoa Powder (unsweetened)
1c. Self Rising Flour
Little bit of baking powder.
Preheat oven to 350*, grease and flour a 9x13 pan. Melt your butter in a sauce pan, I like to add my mint in with my butter the heat helps release the flavor. Chop your mint up fairly fine. After your butter is melted, remove from the heat and stir in the sugar and vanilla. Let it cool for a few minutes and add in the eggs. Next beat in the cocoa, flour and baking powder. Pour it in your pan and stick it in the oven for around 30 minutes. ENJOY!
My family wiped these out immediately! I put white chocolate chunks in half of mine, soooo good.
