The cauliflower casserole is actually fairly cheap coming in at less than $2.00 per serving.
You can find this recipe HERE. I followed it verbatim, except I added some Italian seasoning and some bell peppers to the top.

GF Peanut Butter Fudge
2/3 c. Peanut Butter
¼ c. Coconut Oil
1 tsp. Hazelnut Coffee Creamer (optional)
6. oz GOOD Dark Chocolate
Pinch of Salt (I omitted because I used salted chocolate)
1 tsp. Vanilla
Step 1: Chop & Melt chocolate in a double broiler. Add hazelnut coffee creamer to help smooth out if you wish.
Step 2: Liquify and measure out ¼ c. coconut oil, and add to chocolate.
Step 3: Add peanut butter, salt, and vanilla to chocolate. Whisk until smooth. Taste it! If you find it isn’t as sweet as you’d like you can add some honey to taste.
Step 4: Line a loaf pan with parchment paper and pour in the chocolate mixture. You can add any kind of toppings you’d like. I used a chocolate and nut trail mix that I had in the house.
Step 5: The hard part. Cool for 3 hours… yes THREE HOURS or until it is hard… I promise it will not take less than 3 hours.
